Super Summer Salads


I'm pretty sure I could eat salad for dinner every single day.  In our goal to eat healthier, and because it's been 95 degrees in my kitchen for two weeks, there have been lots of salad nights.

My go to salad is sliced grilled chicken, a huge variety of fruits and vegetables (avocado, celery, cucumbers, onions, mango, blueberries), some tortilla strips for a little crunch, and my favorite Bernstein's Cheese Fantastico Italian Dressing.

Or Caprese Salad.  Tomatoes, fresh mozzarella, basil and aged balsamic vinegar.

Or watermelon, blueberries and feta, mixed with lemon juice and honey.



Put those three salads on rotation, and I'm a happy girl.  HOWEVER, because they are so difficult, and require variety in their diet, the men in my house need more.  So I've been searching the interwebs for new recipes, and today I thought I'd share a few that have been big hits.




This one from Shay at Mix And Match Mama is perfect because the shrimp are grilled, thus eliminating the need to turn on the oven.  Plus, bacon.



I'm pretty sure the boys picked all the avocado out of this salad from Jo-Lynne Shane, but that's okay because there was more for me.  I served it with grilled steak and it was DELICIOUS!



And finally, this one from The Pioneer Woman.  More grilled chicken (yum) and strawberries (yum).  I actually did this one as a wrap, and everyone loved it.  I replaced the goat cheese with feta, because I just say no to goat cheese. Always.

  1. This is exactly what I needed today! Our family routinely gets in a food slump and it can be tough to find things! Great salad ideas and LOVE the avocado. I will be the only one eating it too:)

  4. We always have some variation on the avocado bean salad in the fridge. We get so many greens in our csa box that I just have it all ready to scoop onto a pile of lettuce.

  6. I love The Pioneer Woman!
    And I love summer salads. Cassidy tends to over-grill, over-spice, and over-garlic every veggie we get. In his defense, it's just because I'm a supertaster, but still.
    If it weren't for soups and salads I wouldn't get my veggies in!

  15. I love salad and could eat it every single day! It is by far my favorite food. I'm alot more traditional in my fixings though. No avacodo here...ever. Feta yes...goat cheese...NO! I'm wondering if you have Zaxby restaurants near you? Try their grilled chix cobb salad it is delicious. I can make two big meals out of one!
